Potato Chip tortilla

Ingredients

  • 3 tbsp olive oil
  • 1 onion, thinly sliced
  • salt and pepper
  • 12 eggs
  • 8.5 oz thick cut potato chips.

Preparation

Step 1

Preheat oven to 350. Heat 2 tbsp oil in a medium ovenproof skillet. Add onion, season with salt and pepper, cook until soft, 8 minutes.
Beat eggs and 1 cup water in a large bowl. Season with salt and pepper. Lightly crush the potato chips in the egg mix and let stand, stirring often, until chips are soft, 10 minutes. Stir in onion from skillet.
Heat 1 tbsp oil in skillet over medium, add egg mix and cook until begins to set, 5 minutes. Transfer skillet to oven and bake until firm and golden, 30-35 minutes. Remove from oven, let stand 5 minutes, then slide onto a plate. Cut into wedges to serve.
