Ingredients
- 2 tsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 lbs spinach, washed and chopped
- 1/2 cup milk
- 6 oz cream cheese, cut into pieces, room temp
- 3 dashes worchestershire sauce
- 3 dashes hot sauce
- 3/4 cup shredded mozzarella cheese
- salt and pepper
Preparation
Step 1
Preheat oven to 425. Heat oil in a large pot over medium. Add onion and garlic, cook 5-8 minutes, stirring often.
Add spinach in 2 batches, letting the first wilt well. Toss often, cook for 5-8 minutes until completed wilted. transfer to a colander, drain.
In same pot, bring milk to a simmer. Add cream cheese, cook, whisking, until melted. Add spinach, worcestershire sauce, hot sauce and 1/4 cup mozzarella. stir to combine. season with salt and pepper. transfer mixture to a lightly oiled 1 1/2 quart shallow baking dish, sprinkle evenly with rest of mozzarella. Bake until bubbly and golden, 20-25 minutes.
