Spinach and artichoke soup

Ingredients

  • Oil
  • Tbsp garlic
  • Half onion
  • 8 oz spinach
  • 2 cups artichokes
  • 3 cans white beans
  • 4 oz cream cheese
  • 2 cups chicken broth

Preparation

Step 1

Sauté garlic, onions and artichokes in oil on medium high
Add spinach
Purée beans and add to veggies
Add broth, cream cheese
Simmer on low
