Zucchini Bread

This is delicious but if you are looking for really sweet, this isn't it

Ingredients

  • 3 eggs
  • 1 c oil
  • 1 1/2 c sugar
  • 1 t vanilla (I think it needs more)
  • 2 c peeled and grated zucchini
  • 3 c flour
  • 1 t salt (I used flakey sea salt, was really good)
  • 1 t cinnamon
  • 1 t soda
  • 1/4 t baking powder
  • 1/2 to 1 c chopped nuts

Preparation

Step 1

Preheat oven to 325. beat eggs, blend in oil, sugar and flavoring. Add zucchini. Sift flour with dry ingredients. Beat into first mixture. Fold in nuts. Bake for 60-70 min. Makes two loaves and it freezes really well.
