Twice Baked Potatoes

  • 4 large baking potatoes
  • 1 cup sour cream
  • 1/2 cup milk
  • 4 tbsp. butter
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 cup shredded cheddar cheese, divided
  • 8 scallions, sliced,divided

Preparation

Step 1

1. Preheat oven to 350.
2. Bake potatoes in preheated oven for an hour.
3. When potatoes are done allow to cool. Slice and scoop out flesh. Save skins.
4. To the potato flesh add sour cream, milk,butter,salt,pepper,1/2 cup cheese, and half the scallions. Mix with a hand mixer until blended and creamy. Spoon the mixture into skins and top with remaining cheese and scallions.
5. Bake for another 15 minutes.
