Tortellini Soup

Ingredients

  • 1 bag of fresh spinach
  • 2 (14.5 ounce) cans chicken broth
  • 1 (9 ounce) package cheese tortellini
  • 1 (14.5 ounce) can stewed tomatoes
  • 1/4 cup grated cheese
  • 1/4 tablespoon dried basil
  • 4 cloves garlic
  • salt and pepper to taste

Preparation

Step 1

In a large pot over high heat, saute garlic in 1 T olive oil.
Add chicken broth. Heat to boiling, then reduce heat to low. Stir in tortellini, and simmer for 10 to 15 minutes, or until the tortellini is cooked to desired tenderness. Add tomatoes. Season with basil, salt, and pepper. Add fresh spinach and cheese.
