Lentil Dip

Ingredients

  • 1 can lentils, drained and rinsed
  • 1 red pepper, finely chopped
  • 1/2 cup currants
  • 2 green onions, finely sliced
  • 1/3 cup canola oil
  • 1/4 cup red wine vinegar
  • 1/4 tsp ground cumin
  • 1/4 tsp ground cinnamon
  • 1 tsp curry powder
  • 1 tsp fresh lime juice
  • 1 tsp Dijon mustard
  • 1 bag multigrain Tostito scoops

Preparation

Step 1

Combine all ingredients. Let stand for at least 2 hours or overnight.
Serve at room temperature with scoops.
