BLACK BEAN QUINOA BURGER (The Chew)

Ingredients

  • 1 can black beans (rinsed and drained, 15 ounces)
  • 1/4 cup quinoa
  • 1/2 cup water
  • 2/3 cup almond meal
  • 1/4 cup yellow bell pepper (seeded and minced)
  • 3 tablespoons onion (minced)
  • 2 clove garlic (minced)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon Kosher salt
  • 1 teaspoon hot pepper sauce
  • 1 large egg
  • 3 tablespoons olive oil
  • bibb lettuce (to serve)

Preparation

Step 1

In a saucepan, add the quinoa and water and bring to a boil. Reduce the heat to medium-low, cover and simmer until the water has been absorbed, about 15-20 minutes. Fluff with a fork.

In a medium bowl, add the black beans and mash using a fork leaving some whole black beans.

In a large bowl add the quinoa, almond meal, bell pepper, onion, garlic, cumin, salt, hot pepper sauce and eggs and mix to combine. Add the black bean mixture and mix to combine. Form the mixture into 5 patties.

In a large skillet add olive oil and heat over medium-high heat. Add the patties and cook until browned and warm about 2-3 minute per side.

Serve black bean quinoa burgers in lettuce wraps.

Tips:

- Serve on English muffins for a heartier dish!
- If you can't find almond meal, process blanched almonds until finely ground. Or substitute with breadcrumbs.
