Kung Pao Snow Peas

Ingredients

  • 1 T peanut or grapeseed oil
  • 1/2 large sweet onion, thickly sliced
  • 8 oz snow peas, ends trimmed (about 4 C)
  • 1/4 C stir-fry sauce
  • 2 T chopped unsalted roasted peanuts or cashews

Preparation

Step 1

Heat wok over high heat and add the oil. Add onions and stir-fry until just wilted, about 30 seconds. Add snow peas and stir-fry till nearly crisp-tender, about 2 minutes more. Add sauce and stir-fry to coat, about 1 minute. Sprinkle with the nuts.
