Fish in Foil

Ingredients

  • •fillets of white fish, like tilapia or cod
  • •1 onion, chopped
  • •1 red or orange bell pepper, sliced
  • •1 lemon
  • •3 tablespoons fresh cilantro
  • •salt
  • •black pepper
  • •chili powder
  • •1 1/2 minced garlic
  • •3 tablespoons olive oil

Preparation

Step 1

Cut the Aluminum Foil.Preheat a grill at medium-high heat, or preheat the oven at 425 degrees. Cut two large pieces of aluminum foil.
First prepare the seasoning for the fish. Roughly chop the cilantro and place into a bowl. Add olive oil and minced garlic,squeeze one half of lemon into the bowl, add chili powder to taste and combine.
Wash the fish fillet and pat it dry. Place the fish in the center of the aluminum foil. Brush the sauce on both sides of the fish. Place a few on slices of pepper,and few tablespoons of onion on top of the fish. Season the fish lightly with salt and pepper.
Wrap and cook the fish in the foil sealing the packet well.
If you are grilling, cook for 10 minutes on each side. To bake, place the packets on a baking sheet. Place them in the oven and cook about 15 minutes per inch of the fillet. Allow the packets to stand for about 5 minutes before opening.
