Lemon Artichoke Pesto

Ingredients

  • 7.5 oz jar of Marinated Artichoke hearts
  • 1/4 c shredded Parmesan cheese
  • 3 T extra virgin olive oil
  • 2 T toasted pine nuts
  • 1 T lemon juice
  • 1/2 t grated lemon zest
  • 1 large garlic clove
  • 5 fresh basil leaves

Preparation

Step 1

Process all but the basil in a blender or food processor until finely chopped. Add the basil and continue to process until basil is finely chopped.
