Italian Shrimp and Pasta Salad

Ingredients

  • 1/2 cup whole wheat fusilli pasta
  • 1 can (3 ounces) tiny shrimp, drained
  • 1/2 cup halved grape tomatoes
  • 1/4 cup torn fresh basil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon olive oil
  • 1/4 cup toasted pine nuts

Preparation

Step 1

1. In a medium pot of rapidly boiling water, cook the pasta for 8 to 10 minutes or until al dente. Drain and rinse with cold water until cool to the touch.
2. In a large bowl, combine the shrimp, tomatoes, basil, Italian seasoning, oil, and pasta. Toss to coat thoroughly and sprinkle with the nuts.
