Chicken Avocado Salad with Honey Lime Dressing

Ingredients

  • Marinade:
  • 2 lbs, boneless, skinless chicken breast, pounded thin
  • 1 T olive oil
  • 1 tsp salt
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Dressing:
  • 2 T cider vinegar
  • zest and juices of 3 lines
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1/4 c. honey
  • 1/4 c. vegetable oil
  • Salad:
  • 4 large tomatoes
  • 2 large avocados
  • Lettuce

Preparation

Step 1

1.) Marinate chicken breasts in a bowl with all marinade ingredients. Chill for one hour

2.) Heat grill to medium heat, grill 4-5 minutes per side. Cool. Thinly slice the chicken on a diagonal. Set aside.

3.) In a bowl, whisk together all dressing ingredients (can be done ahead of time)

4.) Arrange on a platter.
