Princess Pie (Coconut Cream Pie)

I added a few ingredients to this recipe. Coconut and vanilla

Ingredients

  • LAYER ONE CRUST:
  • 1 c flour
  • 1/2 c butter, melted
  • 2 Tbsp sugar
  • 1/2 c chopped pecans (optional)
  • LAYER 2:
  • 8 oz cream cheese, room temperature
  • 1 c powdered sugar
  • 1 c whipped topping (buy a tub, you will need rest of it for top)
  • 1/2 cup coconut
  • 1 tsp vanilla
  • LAYER 3:
  • 1 pkg coconut cream instant pudding (small)
  • 1 1/2 c cold milk (whole milk makes it creamier)
  • 1 cup coconut lightly toasted in the oven first

Step-By-Step
1 Layer one (crust):
Mix and pat in an 8x8 inch pan, bake at 350 degrees for 15-20 minutes, until just beginning to turn golden. Do not over bake.
2 Layer 2:
Beat together sugar and cream cheese, vanilla, and coconut. Fold in whipped topping. Spread on cooled crust.
3 Layer 3:
Mix until thickened, add coconut. Spread over cream cheese mixture.

Top with remaining tub of whipped topping.

Toast 1 cup coconut. Sprinkle evenly on dessert. Refrigerate.
