Ingredients
- 2 shallots, minced
- 2 cloves garlic, minced
- 2 tbsp oregano, fresh and chopped
- Juice of 1 lemon
- 1/2 cup olive oil
- 2 lbs pork tenderloin, cut into chunks
Preparation
Step 1
Combine ballots, garlic, oregano, lemon juice and olive oil in a large plastic bag. Add pork, turn to coat, and refrigerate 3 hours or overnight.
Soak 12-16 wooden skewers in water for 20 minutes. Preheat a grill pan to medium. Remove pork from marinade and thread 2 pieces onto each skewer. Grill until cooked through, 3-5 minutes per side.
