Coconut Marmalade Shrimp

Ingredients
- 1 pound shrimp, peeled and deveined
- 1/4 cup butter
- 1/2 t. ground ginger
- 1 t. garlic, minced
- 1/3 cup orange marmalade
- 1 1/2 t. horseradish
- 1/4 cup flake coconut, toasted
- salt and pepper to taste
Preparation
Step 1
In a small bowl, stir together marmalade and horseradish.
Melt butter in skillet till sizzling. Stir in ginger, garlic and salt & pepper. Cook over medium heat, stirring occasionally till shrimp are just pink.
Stir marmalade and horseradish mixture into shrimp. Continue cooking stirring occasionally until heated through. Sprinkle with toasted coconut.
Serve over rice.
