Red Cabbage with Apples

Ingredients

  • 1 head, about 2 lbs. red cabbage shredded
  • 2 tart apples, peeled cored and shredded
  • 4 whole cloves
  • 1 tsp. salt
  • 1/3 cup white wine vinegar
  • 1 1/2 cups boiling water
  • 2 tbs. butter
  • 2 tbs. sugar
  • Parsley for garnish

Preparation

Step 1

In a large, heavy saucepan combine cabbage, apples, cloves, salt vinegar and boiling water. Brin to a gentle boil, then simmer uncovered, for 1 hour, stirring occasionally. Mix in butter and sugar. Continue cooking, stirring, until most of the liquid has cooked away. Sprinkle with parsley
