Blueberry Pancakes with Apricot Syrup

Ingredients

  • For Apricot Syrup:
  • 1 pint fresh (or frozen)blueberries
  • 1/2 cup rolled oats
  • 1 egg
  • 1/2 cup unbleached flour
  • 1 tablespoon baking powder
  • 1-1/4 cup soy milk
  • 5 fresh apricots, pitted
  • 1/2 cup organic sugar
  • 1/2 cup spring water
  • pinch of cardamom
  • For Blueberry Syrup:
  • 2 cups fresh (or frozen) blueberries
  • 1/2 cup organic sugar
  • 1/4 cup spring water
  • pinch of cinnamon

Preparation

Step 1

Pancakes:Add all ingredients into blender. Blend on high, using tamper as need. Serve or place in freezer.
