Ingredients
- 6 oz fingerling potatoes
- 1 clove garlic, minced
- 1 shallot, minced
- 2 T apple cider vinegar
- 2 T olive oil
- 1 peach, sliced
- 2 T almonds
- arugula
Preparation
Step 1
-slice the potatoes into 1/4 inch discs and boil
-mix garlic, shallot, vinegar, oil
-combine all ingredients
