Peach and Arugula Salad

Ingredients

  • 6 oz fingerling potatoes
  • 1 clove garlic, minced
  • 1 shallot, minced
  • 2 T apple cider vinegar
  • 2 T olive oil
  • 1 peach, sliced
  • 2 T almonds
  • arugula

Preparation

Step 1

-slice the potatoes into 1/4 inch discs and boil
-mix garlic, shallot, vinegar, oil
-combine all ingredients
