Ingredients
- 1 lb carrots (not baby carrots)
- 1 TBL butter
- 1 TBL EVOO
- 2 TBL Vegetable or Chicken broth
- 2 TBL maple syrup
- 2 tsp sweet paprika or hot smoked paprika - could also substitute 1 tsp dark chili powder
- kosher salt
Preparation
Step 1
Trim carrots, then cut croswise into 2 1/2" pieces. CUt those pieces into 1/4" sticks
Heat butter and oil in large skillet over medium heat. Add the carrots and stir to coat. Cook for 2 min reducing heat so carrots don't stick
Add broth, syrup and paprika. Cook for about 10 minutes until lightlu browned and liquid has reduced to a glaze.
