Persimmon Cookies

Ingredients

  • 1 cup shortening
  • 2 cups sugar
  • 2 cups mashed persimmons
  • 2 eggs, whipped
  • 4 cups sifted flour
  • 1 tsp cinnamon
  • 1 tsp cloves
  • 1 tsp nutmeg
  • 2 tsp baking soda
  • 1/2 tsp salt

Preparation

Step 1

1. Preheat oven to 375 degrees

2. Sift together flour, baking soda, salt and spices, set aside

3. Cream shortening and sugar together. Add mashed persimmons and whipped eggs, blend

4. Slowly add dry ingredients to persimmon mixture until completely blended

5. Drop by tsp full onto un-greased cookie sheet (parchment paper works well here)

6. Bake for 13-17 minutes.

7. Let cool
