Salmon Cakes

Ingredients

  • 2 (6 ounce) can salmon (or a mixture of canned and leftover cooked salmon filets), drained and flaked
  • 1 eggs
  • 1/4 cup fresh bread crumbs
  • 1-2 tablespoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Flour for coating
  • 2-3 tablespoons avocado or coconut oil

Preparation

Step 1

Preheat oven to 400 degrees
Crumble salmon well then mix with remaining ingredients. Shape into patties (may refrigerate at this point). Dust lightly with flour. In a large iron skillet heat oil over medium high heat. Cook the patties on both sides 4-5 min each, place pan in oven for an additional 6-8 minutes.
