Ingredients
- 2 cups cherry tomatoes,halved
- 1 cup each yellow and orange bell peppers diced
- 3 1/2 oz each mozzarella and feta,diced
- 2 cups canned chickpeas,drained
- 2 shallots,finely chopped
- 1/4 cup chopped fresh basil,loosely packed
- 1/4 cup fresh lemon juice
- 2 tbsp olive oil
- salt & pepper to taste
Preparation
Step 1
Place cherry tomatoes,peppers,cheeses,chickpeas,shallots and basil in a salad bowl. Toss gently. Whisk together lemon juice and olive oil. Mix gently into salad.
