Ingredients
- 1 C cornmeal
- 1 1/4 C flour
- 1 1/2 sugar
- 1 1/2 TB baking powder
- 1 10 oz package from winter squash
- 2 eggs
- 1 C soy milk
- 3/4 C vegetable oil
- cinnamon
Preparation
Step 1
1. Preheat oven to 350 degrees.
Grease muffin tine.
combine flour, sugar, baking powder. and salt in large bowl. Set aside.
Combine squash, eggs, soy milk, and oil in another bowl and mix well.
add dry ingredients and mix until well blended.
Fill prepared muffin tin half full with batter. Sprinkle top with cinnamon.
Bake for 25 minutes. Makes 12 muffins.
