Blackberry Lemonade Concentrate

Ingredients

  • 3 c. blackberries
  • 2 c. freshly squeezed lemon juice (can used bottled)
  • 3 c. sugar

Step 1

Use a blender & puree the blackberries til smooth; strain through a fine mesh strainer to remove seeds. Put into a large pot, add lemon juice & sugar. Stir to combine. Heat to 190ºF using medium-high heat. Stir occasionally & do not boil. Remove from heat & skim off any foam. Ladle into hot jars, leaving 1/4" head space. Clean rim, place lids & screw bands. Place jars in canner; completely submerging jars. Bring to a boil; reduce heat too maintain gentle boil & process for 20 minutes. Remove jars & allow to cool.

To reconstitute: mix one part concentrate with one part water, tonic water or ginger ale. Adjust concentrate to suit your taste.
