Flounder

Ingredients

  • 2 lbs. flounder
  • 1 small onion, chopped
  • 1 t salt
  • freshly ground pepper
  • 3/4 c apple juice
  • 1/4 c Irish Mist
  • 1/4 c lemon juice
  • 2 T butter
  • 2 T flour
  • 1/4 c heavy cream
  • 1/4 c freshly shredded parmesan cheese
  • finely minced parsley
  • boiled new potatoes

Preparation

Step 1

In large buttered baking dish, arrange fish. Sprinkle with onion, salt & pepper. Combine apple juice, Irish Mist and lemon juice. Pour over fish. Cover. Bake in preheated 350 deg oven 15 minutes. Strain liquid. Reserve. Keep fish warm. In small saucepan, melt butter. Mix in flour. Cook 2 mins. Stir in fish liquid and cream. Cook until thickened. Pour over fish. Sprinkle with cheese. Place under broiler until browned. Sprinkle with parsley. Serve with potatoes.
