Ingredients
- 8 oz. young spinach
- 2 large eggs, hard boiled
- 8 pieces bacon, cooked and chopped
- 3 T red wine vinegar
- 1 t sugar
- 1/2 t Dijon mustard
- Kosher salt & freshly ground black pepper
- 4 large white mushrooms, sliced
- 3 oz. red onion (small), very thinly sliced
Preparation
Step 1
Wash, drain and pat dry spinach. Place into large mixing bowl and set aside.
In reserved fat (from bacon), whisk in vinegar, sugar and mustard. Season with small pinch each of salt & pepper.
Add sliced mushrooms and onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide spinach between 4 plates and divide the egg among them. Season with pepper, as desired.
