Coconut Milk Ice Cream

Ingredients

  • 2 cans coconut milk (not reduced fat)
  • 1 tbsp vanilla
  • 2 eggs
  • 1/2 cup maple syrup or raw honey (or both)

Preparation

Step 1

Whisk eggs well for 2-3 minutes

Combine all, whisk well and place in shallow pan in freezer, stirring every hour or so until frozen
