Curried Chicken with Asparagus/Onion/Mushroom

Zone Recipe - YUMMMM I have changed it into 4 - 3 block meals with a breakdown of 3 protein & 2 carbs & 3 fat per serving.

Not really doing the Zone anymore - we're doing something similar that is kinda the same concept only more protein - so I'm keeping the carbs at about 18 per serving but upping the protein & not really worrying about the fat per serving.

Ingredients

  • 24 oz. raw chicken breast, cut into bite size pieces
  • coconut oil
  • 3 cups asparagus, fresh or frozen, large dice (15.6 carb)
  • 3 cups onions, chopped (44.7 carbs)
  • 5 cups fresh mushrooms, sliced (11.5 carbs)
  • celery salt
  • worcestershire sauce
  • curry
  • turmeric
  • garlic

Preparation

Step 1

In saute pan, saute chicken pieces in coconut oil until heated through. Remove chicken from pan, keep warm. Add veggies to pan & additional coconut oil if necessary & saute until desired doneness. Return chicken to pan, add seasoning to taste, and heat through.
