Plum and Shortbread Swirls

Fresh baked plums and mascarpone swirl into shortbread to spectacular results.

Ingredients

  • 18 plums
  • ¾ cup (175 mL) fresh orange juice
  • 2 tbsp (25 mL) granulated sugar
  • 1 ½ cups (375 mL) shortbread cookies
  • 1/3 cup (75 mL) orange liqueur
  • 1 cup (250 mL) whipping cream
  • 1 cup (250 mL) mascarpone
  • ½ cup (125 mL) plain yogurt
  • 2 tbsp (25 mL) maple syrup
  • 1 tsp (5 mL) grated orange rind

Preparation

Step 1

Preheat oven to 350ºF (180ºC).

2. Place plums cut-side up in a small baking dish. Pour orange juice over top and sprinkle with sugar. Bake for 25 minutes or until soft and very juicy. Cool in juices. Cut plum halves in half. Reserve plums and juice together.

3. Place cookie pieces in a bowl and toss with orange liqueur.

4. Whip cream until it holds soft peaks. Combine mascarpone, yogurt, maple syrup and orange rind and fold in whipped cream.

5. Using 6 wine glasses or small glass bowls, layer mascarpone mixture, cookies, plums and any juices in 2 layers and top with a dollop of mascarpone. Chill.
