PUMPKIN MOUSSE PARFAIT

Ingredients

  • 2 oz low fat cream cheese
  • 1/2 tsp ground ginger
  • 1 can pumpkin (15 oz)
  • 1/8 tsp ground cloves
  • 3/4 c skim milk
  • 3 c whipped topping
  • 1 package sf vanilla pudding (4 servings)
  • 1 tsp ground cinnamon
  • 4 gingersnaps crushed

Preparation

Step 1


Beat cream cheese until smooth, add next 6 ingredients, mix until smooth, approximately 1 minute.
Fold in 1 &1/2 cups whipped topping. Layer mousse & whipped topping into parfait cups, chill.
To serve, top with whipped topping & crushed gingersnaps.
