Ingredients
- 12 oz. bulk pork sausage, hot or regular
- 1/2 cup chopped onions
- 4 large eggs
- 1/2 cup shredded Parmesan cheese
- 18 Ritz crackers, crushed
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/8 teaspoon pepper
- 1 clove garlic, minced
- 2 large zucchinis, shredded
- 1 cup shredded Italian 4 Cheese Blend
Preparation
Step 1
Preheat oven to 325 degrees F. Saute sausage and onions in a medium skillet until all pink is gone, drain off fat. Whisk eggs in large bowl until frothy. Stir in Parmesan cheese, cracker crumbs, and seasonings. Stir in cooked sausage mixture and shredded zucchini. Spoon into greased (2 qt) baking dish, spreading and making the top smooth. Bake for 25 minutes. Sprinkle the top with Italian Cheese and bake for 15 minutes longer. Cut into squares to serve. Can be reheated @ 350 degrees for 10 minutes.
