Broccoli Cheese Soup

Ingredients

  • 1/4 cup butter
  • 1 cup chopped onion
  • 1/2 teaspoon minced garlic
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups chicken broth
  • 2 cups half-and-half
  • 1 (14 ounce) pkg frozen broccoli florets
  • 1 cup matchstick carrots
  • 3/4 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 1/8 teaspoon dried thyme
  • 2 cups shredded Cheddar Cheese

Preparation

Step 1

1. In a large Dutch oven, melt butter over medium heat. Add onion, and cook for 5 minutes. Add garlic, and cook for 3 minutes. Add flour, and cook for 2 minutes, stirring constantly.

2. Whisk in chicken broth and half-and-half, whisking constantly. Stir in brocolli, carrots, salt, pepper and thyme.

3. Bring to a boil; reduce heat, and simmer uncovered for 20 minutes. Add cheese, stirring until smooth. Serve immediately.
