Ingredients
- Garnish:
- 2 tablespoons vegetable oil, divided
- 1/2 lb fresh scallops
- 1/3 lb large fresh shrimp, peeled & deveined.
- 1 (12 oz) pkg fresh green beans, trimmed & sliced diagonally into 2-inch pieces.
- 1 cup chopped cashews (can substitute your favorite nut or use peanuts)
- 1 tablespoon minced garlic
- 1/2 cup chicken broth
- 3 tablespoons soy sauce
- 2 teaspoons corn starch
- 2 teaspoons sugar
- 2 teaspoons sesame oil
- Hot Cooked Brown Rice
- Cashews or nut/peanut of your choice.
Preparation
Step 1
1. In a large skillet, or wok, heat 1 tablespoon vegetable oil over medium-high heat.
2. Add scallops, and cook for 3 minutes. Turn scallops and add shrimp to pan; cooking for 2 additional minutes.
3. Turn shrimp, and cook for 2 minutes longer. Remove scallops and shrimp from pan; set aside, and keep warm.
4. In the same skillet, heat remaining 1 tablespoon vegetable oil over medium-high heat. Add green beans, cashews, and garlic, cook for 1 minute.
5. In a mdium bowl, combine broth, soy sauce, cornstarch, sugar and sesame oil. Add broth mixture to green bean mixture, and cook for 1 minute. Return shrimp and scallops to pan, stirring to combine.
6. Serve immediately over brown rice. Garnish with cashews, if desired.
