Smothered Butter Garlic Spaghetti

There was no recipe so I am designing this as I go. Still a work in progress.

Ingredients

  • 4 Chicken breast
  • 1/2 stick unsalted butter
  • 1/3 cup olive oil
  • 1/4 tsp thyme
  • 1 tsp chopped basil if fresh, or 1/4 tsp dried
  • 2 cloves garlic, crushed
  • 1 cup of your favorite small jar of spaghetti sauce
  • 4 slices Mozzarella cheese
  • 1/2 box spaghetti noodles (Mullers's is my favorite)
  • dash salt

Preparation

Step 1

Cook spaghetti noodles as instructed on box. I always prefer Muller's noodles.

While noodles are cooking:
In a medium skillet, add a tbsp butter and 1 tbsp olive oil. On medium-high heat brown chicken on both sides. Add 1/2 cup water, let simmer, turning chicken once until water is cooked away and chicken juices run clear. Lightly salt chicken on both sides.

Spread tomato sauce on top of chicken and top with the cheese. Place in oven for 10 minutes on 400.

In a separate skillet melt the remaining butter and add the remaining olive oil and crushed garlic. Also add the oregano and thyme to the butter sauce. Gently cook the sauce until the garlic is cooked through. Do not burn.

Drain spaghetti, toss in the the skillet and combine with the butter mixture. Salt and pepper to taste.

Remove chicken from the over and top the spaghetti with it.

Serve with a tossed salad and crusty bread.
