Roasted Salmon with Smoked Paprika & Spinach

Ingredients

  • 1/4 cup orange juice
  • 2 tbsp. olive oil
  • 2 tsp. Thyme Leaves, divided
  • 2 lb salmon fillets
  • 1 tbsp. brown sugar
  • 1 tbsp. Smoked Paprika
  • 1 tsp. Cinnamon
  • 1 tsp. grated orange peel
  • 1/2 tsp. Sea Salt
  • 1 bag(10oz) Spinach leaves
  • 1 tsp. olive oil

Preparation

Step 1

1. Mix juice,2 tbsp oil,1 tbsp
thyme in glass dish. Add salmon;turn to coat. Cover Refrigerate 30 minutes.
2. Mix sugar,paprika,cinnamon,orange peel,sea salt.
3. Remove salmon from marinade.
place in foil-lined baking pan. Rub top of salmon evenly with spice mixture.
4. Roast in preheated oven 400 degrees 10 minutes or until fish flakes easily.
5. Heat 1 tsp olive oil in large skillet on medium heat. Add spinach;cook 2 minutes or until wilted.
