Step 1
Drain one can of cubbed pinaple. Put 1 tbsp in pan and heat until sides are brown on medium heat. Add pineapple and coat with the butter. Then add 2 tbsp honey to pinapple and coat and cook another 5 to 7 minutes. Turn off the heat and stir in 2 tbsp toasted pine nuts. Then mix together 2 tbsp mascarpone cheese and 1 tsp run. Once mixed put one dollop on each serving of pinapple. I tried this on 12-31-06, Jax really liked it but suggested no rum in the mascarpone cheese. I also added some sugar and vanilla to the cheese and it helped.
