Step 1

take chicken breast and pound to ¼ inch thickness between plastic wrap. Then brush with fresh lemon juice and salt and pepper. The dredge chicken in seasoned bread crumbs. Heat a large non-stick skillet over medium high heat and coat pan with cooking spray. Add the chicken and cook approx 3 minutes each side until done. When done tent in tin foil to keep warm and to pan add ½ c fat free less sodium chicken broth and ¼ c dry white wine, and 1/4 c heavy cream. Cook for only 30 seconds and remove from heat. Then add 4 tsp capers and 1 tbsp butter. Also, supposed to add mushrooms. We tried this on 11/17/08 and it was very good. The boys liked the chicken (without the sauce) as it was like lemon chicken from Leann Chins.
