Ingredients
- dressing:
- 1 lb cooked, shredded chicken
- 1 box penne pasta
- 2 cups shallots, sliced
- 2 cups canola oil
- 1 cucumber, sliced
- 5 radishes, sliced
- 1 carrot, sliced
- 1 bunch cilantro, chopped
- 1/4 cup evoo
- 2 limes, grated & juiced
- 1 tbsp honey
- salt & pepper
Preparation
Step 1
Bring shallots & oil to simmer & fry until golden (15-20 minutes); remove w/slotted spoon & drain on paper towels.
In large bowl, combine cucumber, radishes, carrots, cilantro, chicken, pasta & shallots.
Whisk lime peel, juice & honey in 1/4 cup evoo; season w/salt & pepper & toss w/salad.
