Dijon Shrimp

Ingredients

  • 1/4 C finely chopped onion
  • 2 garlic cloves, minced
  • 2 Tsp olive oil
  • 1/4 C white wine or apple juice
  • 2 T Dijon mustard
  • 1/8 tsp pepper
  • 1/2 - 3/4 lb uncooked med. shrimp peeled and deveined
  • 1 small tomato, seeded and diced

Preparation

Step 1

- Saute onion and garlic in oil until tender; stir in wine or apple juice, mustard, pepper; bring to a boil; reduce heat to medium-low; add shrimp and cook until shrimp turn pink- about 5 min.; stir in tomato; heat through
