Ingredients
- 1 lb. orzo
- 3 tbsp fresh lemon juice
- 1/2 cup olive oil
- salt and Freshly ground pepper, to taste
- 1/2 cup pine nuts, toasted*
- 1 1/4 cups feta cheese, crumbled (6 oz)
- 1 cup thinly sliced scallions (green part only)
- Toast pine nuts in a shallow baking pan in a 350 oven until golden , about 5-10 mins.
Preparation
Step 1
Cook orzo in a large pot of boiling slated water until tend, then drain well.
Whisk together the lemon juice, oil, salt and pepper to taste in a large bowl. then add hot orzo and toss.
After orzo has cooled, toss with pine nuts, feta and scallions. Season with salt and pepper.
Makes 8 side-dish servings.
