Ingredients
- 16 oz. Penne Pasta, uncooked
- 3 Boneless Skinless Chicken Breast, cut into small strips
- 2 small Tomatoes- chopped
- 2 Garlic Cloves
- 1/2 Cup Parmesan Cheese
- 3 1/3 Cups Heavy Cream
- 5 Tbsps. Butter
- 1 Tbsp. Olive Oil
- 2 Tsp Cajun Seasoning, plus more for garnish
- Salt & Pepper, to taste
Preparation
Step 1
1. Cook pasta
2. in a large pan heat 1 tbsp. of butter and 1 tbsp. of olive oil. Add chicken and season well with salt & pepper. Cook until done.
3. Remove chicken from the pan and cover it on a separate dish to keep warm.
4. Place remaining 4 tbsps. of butter and garlic in the pan you removed the chicken from.
5. Let the garlic sauté for about 1 minute, making sure it doesn't brown and burn.
6. Add the heavy cream and when it comes to a light simmer, add your parmesan cheese and mix well.
7. Season with salt, pepper and Cajun seasoning.
8. Place pasta in a bowl and top with chicken, tomatoes, scallions, parmesan cheese and sprinkle it with additional Cajun seasoning if desired.
