Bourbon Pork Tenderloin with Mustard Sauce

Ingredients

  • 2 pork tenderloins, 1.5 lbs each
  • BOURBON MARINADE
  • 1/2 c soy
  • 1/2 c bourbon
  • 4 T brown sugar
  • MUSTARD SAUCE
  • 1 T dry mustard
  • 4 T Dijon mustard
  • 2 T sugar
  • 2 T vinegar
  • 4 egg yolks, beaten
  • 1 c heavy cream
  • 1/2 t salt

Preparation

Step 1

1. Mix all marinade ingredients together in small mixing bowl. Marinade tenderloins 2-3 hrs before cooking.

2. While tenderloin is marinading make mustard sauce. Place all ingredients except cream in top of double boiler. Cook while stirring constantly until thickened, about 10 min. Cool slightly, then whisk in cream. Serve sauce at room temp.

3. Grill tenderloins over med heat until done, serve with mustard sauce.
