Ingredients
- 3 tbsp olive oil
- 7 eggplants- cut into 1 inch wide slices
- 1/2 cup toasted pine nuts
- 3 ounces goat cheese, crumbled
- 1/2 cup basil, thinly sliced
- 2 tbsp chopped mint
- 3 tbsp extra-virgin olive oil
- 3 tbsp balsamic vinegar
- 1/2 tsp salt
- 1/2 tsp freshly ground pepper
Preparation
Step 1
Place grill pan over medium- high heat
Place eggplant on pan and drizzle with olive oil
Grill eggplant until tender, about 4 minutes each side
Place eggplant side-by-side on a serving platter
Sprinkle with pine nuts, goat cheese, basil, and mint
Drizzle with olive oil, balsamic vinegar, salt and pepper
