Ingredients

    tbsp olive oil

  • 7

    eggplants- cut into 1 inch wide slices

  • ½

    cup toasted pine nuts

  • 3

    ounces goat cheese, crumbled

  • ½

    cup basil, thinly sliced

  • 2

    tbsp chopped mint

  • 3

    tbsp extra-virgin olive oil

  • 3

    tbsp balsamic vinegar

  • ½

    tsp salt

  • ½

    tsp freshly ground pepper

Directions

Place grill pan over medium- high heat Place eggplant on pan and drizzle with olive oil Grill eggplant until tender, about 4 minutes each side Place eggplant side-by-side on a serving platter Sprinkle with pine nuts, goat cheese, basil, and mint Drizzle with olive oil, balsamic vinegar, salt and pepper
