Ingredients
- 1 ea Yellow cake mix
- 3 ea Eggs
- ¼ cup Oil
- 1 tsp Baking Soda
- 2 tbs Cinnamon
- 1 ea Can Pumpkin (20 oz)
- 3 oz Cream Cheese, softened
- ¾ cup Butter, softened
- ½ tsp Vanilla
- 1 Tbs Milk
- 2 cups Powdered sugar
Preparation
Step 1
Preheat oven to 350°. Blend together cake mix, eggs, oil, baking soda, cinnamon and pumpkin. Fill paper lined mini muffin pan 2/3 full. Refirdgerate unused batter between batches.
Bake for 15 minutes and cool.
Meanwhile beat cream cheese and butter until smooth. Add vanilla and milk. Gradually add powdered sugar until frosting is desired consistency. Frost cooled cupcakes.
