Ingredients
- 2 medium yellow onions, chopped
- 4 cloves garlic, minced
- 2 green peppers, chopped
- 1 tbs olive oil
- 2 lbs ground chuck beef
- 2 - 14 oz cans pinto beans
- 14 oz can tomatoes, drained and chopped
- 4 oz can green chilies, chopped
- 1 tbs dried oregano
- 2 tsp ground cumin
- 1 tsp cayenne pepper
- 1 tsp pepper
- 1 tsp salt
- 1 cup beef or chicken stock
- 1 cup sour cream for garnish
- 1 cup sharp cheddar cheese, garnish
- 2 tbs green onions, garnish
Preparation
Step 1
In a skillet, sauté onions, garlic, and bell peppers in oil until soft. Add the ground beef and brown. Drain off any excess fat. Transfer the meat and vegetables to the crockpot. Add the remaining ingredients except the garnishes and mix throughly cover, cook on low 6 to 8 hours or on high for 3 to 4 hours.
