Salmon in a Cream Sauce

Ingredients

  • 2 # Fresh salmon, skinned and boned and cut into 8oz. portions
  • 1/2 C. Fish stock
  • 1/2 C. White wine
  • 2 C. Whipping cream
  • Pinch of salt
  • Pinch of white pepper
  • 4 Tbs. Horseradish
  • 3 Tbs. Corn Starch
  • 6 Tbs. Water

Preparation

Step 1

Bring stock and wine to a boil. Reduce heat to medium and simmer to reduce by half; about 30-40 minutes. Add whipping cream and simmer for 15 minutes. Add salt, pepper, and horseradish. Keep warm.

Combine corn starch and water to make a slurry and then add to mixture.

Bake, broil or grill salmon and top with sauce.
