Ingredients
- 1 1/2 lb tender zucchini
- 1 can condensed cream of chicken soup, undiluted
- 1 8oz carton sour cream
- 1 4oz jar diced pimento
- 1 can (81/2oz)water chestnuts sliced
- 2 medium onions finely chopped
- 1 stick of butter or margarine
- 1 package herb stuffing mix
Preparation
Step 1
Cook zucchini in salted water till tender. Drain well.
Add next 5 ingredients, melt butter in pan, add stuffing and mix well. Pack into the bottom of a 2 quart casserole ( Save some for the top)
Pour zuchinni mixture over the stuffing, sprinkle remainding stuffing, dot with butter on top of casserole.
Bake for 30" at 350
