rice - spinach biryani

Ingredients

  • 1 tbsp veg oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 tbsp curry paste (mild - hot your taste)
  • 1/4 tsp each salt & pepper
  • 1 cup basmati rice
  • 1/4 cup raisins
  • 1 cup chicken broth
  • 4 cups chopped fresh spinach
  • 1/4 cup toasted sliced almonds

Preparation

Step 1

heat oil, cook onion until golden, add garlic, curry paste, salt & pepper, cook until fragrant, 2 min. stir in rice and raisins to coat. add broth,and 1 cup water, bring to boil. reduce heat and simmer until almost no liquid remains, aprox 20 min. cover, let stand 5 min.
